Since ALL 3 talent trees have viable tanking, DPS, and PVP specs, the one that you choose is almost based on your play style.
Unholy
DPS:
This spec (http://www.wowhead.com/?talent=jZG0exZfM0Itckt0q0csut) is claimed to be the best DPS build out there. You MUST duel wield to make this spec work. It revolves around using diseases and summons of your ghoul and gargoyle.
Tanking:
Since Death Knights are supposed to be the best caster tanks,this tanking spec (http://www.wowhead.com/?talent=jZGget0c0o0oZsxMItbkxxoo0o) utilizes many magic damage reduction abilities, like Magic Suppression, and Anti-Magic Zone. Also it uses AOE abilities, like Death and Decay, Corpse Explosion, and Pestilence.
PvP:
I know I'm not a big pvp'er, but some of y'all might be :eek:, and this (http://www.wowhead.com/?talent=jf0GqZZfMhhtcog0q0fsut) might be a good spec to try out. It takes advantage of slowing effects, and a faster cool down on Death Grip.
Frost
DPS:
Here (http://www.wowhead.com/?talent=jfV0VhZG0exhxdRhoVosxb) is a good DPS frost spec that will crit a TON! (And Death Knight crits hit twice as hard as our regular hits). This is another duel wield spec, and has very high burst damage. It would also be a viable PVP spec as well.
Tanking
This (http://www.wowhead.com/?talent=j0E0ohZGxxthczRhoVosx0xM) tanking spec will have a lot of crits, and high survivability. It will be a better off tank spec than anything because it doesn't have many damage reducing abilities, only Unbreakable Armor, but it does have Frigid Dreadplate, which decreases the chance that melee attacks will hit you.
PVP
This spec (http://www.wowhead.com/?talent=jcE0khZGgxthczRGohost) is a very good PVP spec, combining many slowing, and stunning effects, with Lichborne, which makes you undead during the duration of it. Also Lichborne makes you immune to charm, fear, and sleep effects, and it can be used while under these effects.
Blood:

With this you take Summon Gargoyle over Dancing Rune Weapon, because the gargoyle can stay up for an entire minute (based on runic power). Also DRW only stays up for 20 seconds and mimics the attacks you do, so you will have higher burst dps, but with the gargoyle you will do more dps, but over a longer period of time.
Tanking:
This build (http://www.wowhead.com/?talent=jcEMqh0IsbRzhAohxbzhZ0x) is a good off-tank build, that is self sustaining, because of its good self heals. It has Vampiric Blood, which increases the amount of health generated by 50% for 20 seconds.
PVP
This spec (http://www.wowhead.com/?talent=jcEMqh0IsbRzhAohxbzhZ0x) is amazing for PVP because it has great self heals as well as health and strength increases. It also does good damage.
